I've been twice to Mulege, which I love for a low-key town with drive-up, very uncrowded snorkeling. The angels, surgeons, morays, and lots of other fish were in huge abundance, and we found a nearby sea lion rookery just a short boat ride out.
Since San Carlos is about six hours less of a road trip each way, I'm interested in trying it out, but I'm wondering if it has as much to offer.
Anyone been to both, or other nearby Baja areas that can fill me in?

If you like Mulege, you'll love SC. Everything you mentioned is even better in SC.

SC also has a 4 lane divided highway with plenty of gas stations and places to stop along the way. So it is not just a shorter distance, it is alot less stressful to drive. Don't get me wrong, the drive down to Mulege is awesome and great to do once in a while. But the 2 lane, shoulderless, drive through the mountains is not something I perfer to do on a regular basis!
