I would like to bring my wife down to SC in early March. It will be our first time down, and the wife wants to know "what is there for me to do if you go fishing?". (my last fishing "vacation+fishing trip" with her was to Cabo, where there was LOTS for her to do while I fished)
Can any of you list some places/activities we/she could take part in? She would love to "shop", lay on the beach, see some sites, etc. I would love to, well ... fish, and ... fish, and fi ... well, you get the idea. 
Also, suggestions regarding places to stay and places to eat would be mucho appreciated.

There's a lot of shops on the main street in San Carlos. Art Galleries, trinket shops, etc. If you want to stay on the beach, I like the Fiesta. It has a great restaurant and nice beach....and pretty reasonable price to stay, but nothing fancy. If you don't care about staying on the beach, the Marina Terra might be a good option. It's at the Marina, has a nice pool, beautiful views of the marina, and there's a few restaurants & bars, and shops located all around the Marina. They also have a beach club that is a bit of a walk away, but I think they have a golf cart to take you over whenever you want.
I haven't stayed at either of these places in a while, so someone may be able to offer a better recomendation. I'm offering my opinion mostly based on location.
San Carlos is a small, spread out town and a great place to explore. Most everyone is really nice, so your wife might enjoy exploring the town as much as anything. Make sure she goes past the marina, around the bahia to the "Catch 22 Beach" side. There's a cool little bar called the Soggy Peso on the beach that's a good place to watch the sea and enjoy a cold one.
