That is two of the best examples of quality cutting I have ever seen. I have quartered tons of Albacore but not with the speed of these people. As for fin fish, I will never be that fast. Their knives are like razors which has always been a problem for me. I usually get a dozen or so good cuts before I have to touch up the blade. They are so fast that you would have to watch the video a few times to get each step and each step is important to get a really good loin.
