Good morning,
First I would like to say that I do not live in either SC or Guaymas but am a gringo who has lived many years in northern Sonora. I have been in business all my years here including a stint in the food business.
I would like to offer the following:
Be sure you have all permits and licenses. Have a good accountant and make sure you are operating within the guidelines of the Hacienda.
Check and double check that everything is good with the health dept. Nothing will put the brakes on faster than being closed for a few days.
And lastly, I would suggest talking to Larry of the old J.C.'s cafe. He, I am sure, would be able to give you some good pointers and info.

Many young people from Guaymas are more "upwardly mobile" than in the past. Many of these have spent extended time in the USA and would patronize your business while in San Carlos.
If they have acquired the taste for these products they will make special trips for them.
Your ideas seemingly will be well received from the residents in our "gringolandia" also. Presention, quality, convenience and service are always big factors but your research and plan also seems to cover them. Price is secondary if the above factors are covered.

i think you will be closing store rather quickly, i have three teenagers in the house and they like wraps not what you plan on doing, even friends who are in the 40ies are ordering all the time chicken wrap, tuna wrap, sorry.
i think You would be better of doing it with tortias, my home is not in SC, still state side and i see some of these bagle places going under...
Have a lot of relatives in Guaymas and if it doesn't has any frijoles on it forget it.

Of course we'll put the corned beef and pastrami in a wrap with lots of jalapenos and caliente sauce with a spicy pickle and we will even through in some vialter.

Totally disagree - bagels have been in for centuries, wraps, in my humble opinion are on the way out.
Have a friend who just returned from the Carnegie Deli in New York, still going strong after all these years. If the food is good and the place in clean and the owner or partner is there there should be no problem. The Iguana(In the Kiosk by the bowling alley) was not a deli, but the smoked ribs and chicken were the best. If the new owner had kept the recipes the same am sure it would still be open.

Not off to too good a start, offending future customers is not the way to go. You had better reconsider, San Carlos may not be your best bet. We are a very close and communicative community. Not leery of outsiders, but not prone to take elitism either.

I'm just responding to a total jerk.
This person has no conception of business and is totally out-of-line to make a comment like that and then even show their lack of education by not even knowing how to spell their abusive comments.
He/She sounds like they may be the round with a hole in the middle.
People like that makes this easy, going nice guy really preterbed.

Nesso, pause when agitated. It's probably hard to hear negative thoughts when you are already in the process of starting the business but you did ask for input. If suizo has a lot of relatives in Guaymas, his opinions may be accurate although, perhaps, put a little abrasiviely. Time will tell. Obviously many people are looking forward to bagels in San Carlos.
While "where did you go to school at" sounds very foreign to a lot of ears and is not gramatically correct, it is a westernisn very, very commonly used. I grew up hearing it in eastern Oregon and still hear it all the time in Seattle and other parts of Washington State. It is so common that it is also commonly written. Another phrase heard often is "where is it at."

I think I will take my business to Puerto Vallarta instead.
San Carlos doen't deserve what I have to offer after all.
Maybe, some of the posts are right, just a place for many to waste the day at.

Lots of us want to see you succeed. You have identified a niche here that's missing. You'll just need to finetune the menu to accommodate those who dont want past. and CB on rye.

I find the above to be a rather arrogant statement and not one normally associated with an experienced businessman.
Perhaps PV would be better for you as there does not appear to be a good fit between you and SC.

Wow. I've been lurking, reading this thread with interest (all along thinking that it's difficult to imagine many Guaymas residents making the trip to SC for deli food).
Unfortunate and surprising reaction to an honest answer to his question, but the thread is interesting (culturally and otherwise), and in the end it seems the purpose was served: SC and nesso's attitudes about how to serve people don't seem to be a good match.
